These beans have a particularly high amount of fibre. They are quite floury in texture and have a delicate sweet flavour. They go very well in dishes that have a long cooking time, and will absorb all the delicious juices around them.

Preperation
Salade rose
150 g of red beans
150 g of white beans
2 ripe avocados
Sauce
1 teaspoon mustard. 1/2 teaspoon tarragon, sea salt
4 tbsp herbs, 1 scallion or onion, finely chopped
3 tbsp sesame or sunflower oil
Freshly ground pepper.
Preparation
Soak the beans overnight. The next day, drain the water, rinse the beans and cook well with fresh water for about an hour. Drain the cooking water and quench the beans in cold water. Add the ingredients for the sauce to a large bowl and mix with the SChwingbesen to a creamy sauce. Mix the still warm beans and allow the salad to cool. Cut the avocados into cubes, sprinkle with lemon juice and lift under the salad before applying.
